I *heart* weekends!

This is probably the millionth blog that I've ever started, and like every one, I'm going to try my very best to keep it somewhat current... so here goes!

My title pretty much sums up my feelings right now. This weekend was great - even though nothing big happened! Chris and I have started the South Beach Diet (about 2 weeks ago) and we've both been losing weight and feeling fantastic. And no, it's not the Atkins-eat-your-cholesterol-heart-out diet. It features lots of vegetables, lean proteins, and no simple carbs like sugar, white breads, pastas, rice, etc. Chris calls it the "15 servings of vegetables a day" diet.

Friday night, we received a mysterious package in the mail. We opened it up on Saturday morning and found that my mother-in-law had created a book from our wedding photos! It was REALLY cool!! I told her that she has now signed herself up to do this for our future children. I have many talents - doing things like this (i.e. organizing photos into something that tells a story) is definite not one of them! You can see (and order!) the book here. Photography is one of her many talents - and thankfully, she does things with the photos she takes! Unlike some of us... ahem... :) I can't wait to take the book to work with me to show it off! What an awesome gift!! Thanks WOW!

Saturday morning, we went down to The Neighborhood Restaurant for some breakfast. We had awesome veggie omelets! It was nice to have a tiny little plate of breakfast, while watching those around us gorge themselves on plates of waffles, pancakes, homefries, toast and pastry. While all of those foods are definitely good - I'll keep my omelet and leave my 10lbs on the doorstep! After breakfast, we shopped at the Union Square Farmers Market. We bought a TON of stuff, including leeks, Swiss Chard, cubanelle peppers, green, yellow and red peppers, and some fresh, ultra-local mozzarella. I think Farmer's Markets are the greatest things! Ours has special programs at it that allow low income people to use their government funding to buy fruits and vegetables using little tokens. People can also buy the token with their credit cards, which make it easy for those no-cash folks. Check out me and my veggies!


Our weekend project was to build a workbench in the basement, and also improve our shelving systems for storage. All was going just fantastic, until I stepped down a little too close to the "demolition stuff to get rid of" pile and a nail when about 1/2 inch into my foot! That took me out for the day, mostly because I wanted an excuse to do a bunch of homework, but I think Chris felt really bad about it!

Fortunately or unfortunately, during Chris's time down in the basement, he found a leak in the pipe that brings water into our house. It's a tiny little leak, but we've already contacted our insurance to see if they cover anything like this, and a plumber came out to break the bad news that this is not going to be a cheap fix. Ooh the lows of home ownership!!

We were going to go out for dinner, but instead just stayed in and cooked up some of our Farmer's Market and backyard garden bounty. I couldn't even tell you what I made, just that it was about 95% veggies, 5% cheese and 100% consumed! One of the pillars of the diet is simply that you can stuff yourself full of low GI foods (glycemic index) because these foods do not produce blood sugar spikes, and therefore do not cause you to be hungry, even when you shouldn't be. So, between the two of us for dinner, we ate 2 onions, 5 homegrown tomatoes, 1 large homegrown zucchini, one bunch of swiss chard, two bouquets of broccoli, a package of seitan, a bunch of herbs and 1/2 cup of parmesan cheese. It was fantastic, and I wasn't hungry until almost 8AM!

Today, we just bummed around. I've got a lot of homework this weekend, so I finished quite a bit of it today. We also watched Diary of a Wimpy Kid. It was pretty funny! Chris laughed the whole way through - it was almost funnier to watch him watch the movie!

After a trip to Whole Foods and Stop 'n' Shop pick up the rest of the week's food (two stores because Stop 'n' Shop has Quorn at HALF THE PRICE of Whole Foods), I made grilled, marinated zucchini and spaghetti (squash) and quorn-meatballs for my lunch for the week. I love having healthy, homemade lunches ready to grab as I run out the door to work. I'm also planning to make some "egg muffins" tonight, which are basically little omelets that I can grab on my way out the door. You cook them in a muffin tin and they're great and super filling!

Tonight's dinner is Mexican lettuce wraps - otherwise known as tacos using lettuce leaves instead of shells! Yum!

My veggie marinade (approximately):
1/2 c. EVOO
1/4 c. Balsamic Vinegar
1.5 tbsp. garlic powder
2 tsp. dried oregano
2 tsp. dried basil
1/2 tsp. Stevia/1 tsp. sugar

It will be very thick. Grill your veggies, put them in a bowl and pour the dressing/marinade over the top. It's a tangy sweet dressing. It would be great to make a whole wheat pasta salad with it, add feta, or make a veggie wrap. Yum!
